Sweet Potatoes

The amazing sweet potato!

Rich in Vitamin C, B6, Vitamin A, potassium and beta carotene, it’s a wonder food for healthy bones, teeth, digestion, energy, cell production, stress resistance, immune function, metabolism, and healthy arteries, blood, muscle and nerve function!  How’s that for a power punch!

Of course, preparing sweet potatoes can often pack on the pounds, so keep them simple – they’re rich with flavor all by themselves.  Personally, I like to bake a sweet potato in a paper towel, and run out the door!  But here are 2 preparations – 1 sweet and 1 savory – to keep ’em clean and simple:

Sweet:  (forget the marshmallows and sugar)

Heat oven to about 400 degrees.  Poke some holes in the potato, brush with a tiny bit of Organic Olive Oil and bake it!

Once baked, cut lengthwise, mash up the inside a bit with a fork and drizzle a little Organic Agave Nectar and Cinnamon over it!  Easy!



Heat the over to about 450 degrees.

Cut your 4-5 sweet potatoes into cubes or slices and put them into a bowl.

Coat with Organic Olive Oil, a little Rosemary, Himalayan Sea Salt and Ground Pepper (sometimes I add some red chili flakes or cayenne pepper because I like a little spice in my life)

Put the coated potatoes on cookie pan covered in foil.

Bake until the center is soft and the top is brown.

So yummy!  A great side with a bunch of greens and some organic roasted chicken or wild salmon.
